Baking sweet strawberry cookies

Strawberries are very tasty on their own, but they are also yummy when you use them in baking. So, let's collect your home-grown fruit and get creative in the kitchen

A Mother’s Day treat!

It’s Mother’s Day on March 27th, and if you’re looking for a thoughtful treat for your mum or granny, these cookies would make the perfect gift. Just ask an adult to help you with the tricky bits and you can serve up a delicious surprise

To get started, you’ll need:

  •  140 grams strawberries
  • 1 tablespoon lemon juice
  •  1 tablespoon caster sugar
  • 100 grams butter
  • 100 grams soft brown sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • 250 grams plain flour
  • ½ teaspoon baking powder

Step 1: Preparing the strawberries

  • Give the fruit a good wash and remove the leaves
  • Then cut them into small chunks
  • Put the chopped strawberries into a bowl before adding the caster sugar and lemon juice
  • Stir the ingredients and leave it to the side for 10 minutes

Step 2: Making the dough

  • Add the brown sugar and butter to a large bowl or mixer
  • Mix them together until they are light and fluffy
  • Crack the egg into an empty bowl, making sure you remove any shell that falls in
  • Add the egg in with the brown sugar and butter mixture
  • Now add the vanilla extract and mix it all together again
  • Then stir in the flour and baking powder

Step 3: Adding the strawberries

  • Strain your strawberry mixture and dab them with some kitchen roll
  • Add the strawberries to your dough and mix it using a wooden spoon or spatula

Step 4: Preparing your cookies

  • Line some baking trays with greaseproof paper
  • Dollop your cookie dough on top using a spoon – make sure you don’t flatten them and check they’re not too close together as they’ll get bigger when they bake
  • You should be able to make about 12 cookies
  • Chill the baking trays and dough for 15 minutes

Step 5: Baking your cookies

  • Preheat your oven to 180C/160C fan
  • When ready, bake the cookies for 10-11 minutes
  • You'll know they're done when they are golden and start to turrn crispy on top
  • Remove them from the oven and leave them to cool on a wire rack
  • Then serve and enjoy
